2012 Resolutions

Last year Doug and I shared our resolutions with each other.  We hoped to hold each other accountable to them.  I’m not totally sure if it worked but I’m hoping to do the same this year.

So, after lots of thinking and praying … here is what I’ve come up with for my 2012 new year resolutions and goals.

Cook with more vegetables.

Doug and I both hate vegetables.  When I cook a meal, it’s usually just a main dish and that’s it.  It’s bad.  But I know if I made a side of frozen peas or something, we wouldn’t eat it.  With three growing boys in the house, I need to do better.  So I’m on a hunt for recipes with veggies in them that Doug and I will like.  I’m thinking stir fries, chili’s, casseroles – that sort of stuff.  Anything that will make eating veggies taste good 🙂

Publisher

So I’ve been toying with the idea of being published … like a book.  I’m not sure I have what it takes, but I think it’s at least worth a shot.  So in 2012, my goal is to do more research on what it would take to be a published writer and how to do it.  Maybe even send something off to a publisher(s) by the end of the year.

Hang pictures.

We’ve been in our house for about two and a half years and I have ZERO pictures of the family on the walls.  So this year my goal is to finish decorating and hang pictures on the walls.  I love taking photos of my friends and family and I have a tons of picture frames …. I just need to put them together and put them on my wall.

Little Warriors

Just keep going with the Little Warriors.  I think the first thing I want to do is plan the second event.  And the next thing is to get a website up and running.  I started looking into it before but it got too crazy with Thanksgiving and Christmas.  So I’ll get this done in 2012.

There are so many more things I want to get done, but I think I’m going to try to focus on these four.  They are pretty close to my heart these days and something I end up thinking about every day. I think those are the best kinds of resolutions.  The ones that are on your mind every day.

It’s just so crazy to think of everything that has happened over the past year.  How much we’ve been through and how far we have come.  So is the journey of life I guess.  Here’s to 2012 and the adventures God has in mind for us all!

Love, Mel

As I was reading your goals for 2012, you mentioned about eating healthier. There is a cookbook out called “Deceptively Delicious” by Jessica Seinfeld. It is “simple secrets to get your kids eating good food.” It is written by Jerry Seinfeld’s wife for their family. Happy New Year to you and your family.

  2. You have what it takes!!! You are an amazing writer! I get you about the veggies…my 5 year old eats so bad and its our fault, and right now I’ll just use the triplet excuse 😉 Happy New Year!

    Mel,
I’m def with you on the veggies. I love certain veggies. my boyfriend is very picky though, I to think it would be a good thing to find recipes that make the veggies taste great (if you find any good ones, please let me know I would love that) well at least for him and my lil man he will be 2 in february. I want him to like veggies the way I do. Being publisher, Mel I think that is so awesome and so perfect for you. I think your such a great writer. I tell my boyfriend this all the time. over the weekend I was able to get to your blog from my sister in law’s computer. She could not believe how adorable your boys are. all she could say was awwwww, they are so cute. you have to look into being published for sure. your great at it. Good luck Mel, with everything u do in 2012!!!!!!

Have you ever tried sweet potatoe fries? You just bake sweet potatoes sliced into fry shapes. I love sweet potatoes because they are a pretty sweet tasting vegetable. another idea is some burger recipes have you put in vegetables like shredded carrots. sneaky way to get several differnt vegetables in without really noticing them.

Hey Mel, check out this website for some delicious veggie recipes

    Hope that helps 🙂

  9. Wow…sounds like some pretty worthy goals. I have yet to make mine yet. Hmmm….maybe I should get on that.

You should definitely publish a book. I would buy it. 🙂

I agree with the first comment….get the cookbook Deceptively Delicious. My mom bought it and made brownies for my son with carrots and spinach in them. He hates veggies and I was very skeptical that he would like them. I still prefer the real deal but he actually requests that she make him the “veggie brownies”!

The book idea is tremendous. I would buy as well and tell everyone I know to buy it! You are an amazing writer and WOW, have a heck of a life story to tell. You give inspiration and are a glass half full kind of gal. That attitude needs to be shared!

    Hey Mel!
I love veggies and have passed that trait on to 2.5 of the 5 kiddos! Try sneaking them into meatloaf and other things…. just don’t let anyone know they are there! I just bought a broccoli coleslaw, I’ll let you know how that one turns out!
Get published! You for sure have the knack for writing, give it a shot! It may not be easy but if anyone can do it it’s you! Maybe the new author of a Harry Potter/Twilight phenomenon! I can see your name in lights!
Hang those pictures! You can find great frames on clearance! I have ton’s around my house and I never paid more than $4 for a frame! The only thing with that is changing them out after a few years, that can be a chore!
Little Warrior’s…. Well this is already a worldwide thing with your blog! Look into doing event’s outside your immediate area, I’m telling you the audience is there! Maybe not this year but look into getting it up and running and they will come!
    Love you always my friend,
    E

  13. Hi there!

I have 2 picky eaters in my house who will eat none or only like 2 kinds of veggies and the other 2 of us will eat them in pretty much any form. The other day I threw a bunch of soft (cooked or frozen and thawed) cut up veggies in store bought tomato sauce (for pasta) and used my immersion blender to blend it all up! It worked awesome!! And my two picky eaters ate it up and loved it. Might want to pick one up…you can also make soup and blend in veggies. Also, in the morning for breakfast, make fruit smoothies. Then throw in a handful of spinach and/or diced carrots. Can’t even taste it with all the fruit. And super good for you. Lastly, my pediatrician (actually…I think you go to the same doctor!!) recommended starting my little guy on V8 Splash (the fruit juice with veggies) to get some veggies in him (I have not gotten him to eat more than about 10 total bites of veggies since he was born 3 years ago…and I LOVE veggies and he got plenty while I was pregnant. I have no idea how this is possible!). But, thankfully, since our diet is pretty healthy, he gets lots of fruit, we take a daily vitamin and I sneak veggies in anywhere I can, he is 3 and perfectly healthy. Good luck!

    Colleen

PS…Don’t feel too bad about the photos…I have lived here for 10 years and though I have a few photos up, I still don’t have a single one up of my 3 year old. Doh! That is on my list for this spring as well! 🙂
